Pistachio, Basil & Fresh Orange Crusted Wild Salmon

Ingredients
For Crust:
1 cup shelled natural pistachio nuts
3 large basil leaves
½ medium orange juiced & zested
1 tablespoon raw chopped garlic
½ cup fresh grated Parmesan reggiano cheese
1/8 cup olive oil
For Tomato Oil:
2 plum tomatoes
1 cup olive oil
salt & pepper
Directions
For crust:
Combine all ingredients in food processor & mix
until nuts are chopped to a medium consistency
For Tomato Oil:
Roast tomatoes in pre-heated 400 degree oven until light browned
let cool ten minutes
emulsify in blender with oil
salt & pepper to taste
For Preparation:
spread crust evenly over six 7-8oz organic salmon fillets
pre-heated oven to 350 degrees
drizzle w/ tomato oil
bake for 10-12minutes
drizzle w/tomato oil at service
