Oven Roasted Salmon with Sesame-Basil Vinaigrette

Ingredients

Salmon
8 (6oz) portions of Salmon
1tsp. Fresh Chopped Herbs (Italian Parsley & Thyme)
1tsp. Extra Virgin Olive Oil
Salt & pepper to taste.

Vinaigrette
2 Tbsp Sesame Seed, Black/White Mix
1 Tbsp Garlic, Chopped Fine
½ cup Orange Juice
2 oz Sesame Oil
1oz Balsamic Vinegar
½ Tbsp Soy Sauce
6 Basil Leaves, Chopped Fine
1/2 Cup Vegetable Oil
½ Tbsp Lemon Juice
Pinch Salt and Black Pepper

Directions

Method of Prep: Vinaigrette
1. In a sauté pan lightly toast the sesame seeds and garlic.
2. Add the O.J. and sesame oil and reduce by ½
3. Cool to room temp.
4. In a bowl whisk remaining ingredients into sesame reduction

Method of Prep: Roasted Salmon
1. Marinate Salmon with herbs and oil; season to taste
2. In a hot sauté pan, sear salmon, flesh side down until you achieve a golden brown crust
3. Turn salmon and place pan in a Preheated 375° F oven for 5-7 minutes or until desired temperature
