Ingredients
Sirloin 14oz
Salt To season
Procedure
1. Pre heat grill to 500 degrees
2. Season steak with salt on both sides
3. Cook till desired temp
4. Let Steak rest for 5 minutes
Truffle Mac Cheese
Ingredients
Cabot Cheddar cheese 1 cup (shredded)
Fontina cheese 1 cup (shredded)
Gouda cheese (not smoked) ¾ cup (shredded)
Grana Padano 1 cup (Shredded)
Garlic 2 each Peeled
Heavy cream 1¼ quarts
Lemon juice ¼ tsp
Truffle oil ½ oz
Onions 2 oz
Salt ¼ tsp
Pepper ¼ tsp
Truffle Peelings 1 oz
Directions
1. In a large stock pot place the heavy cream, onions, garlic to reduce by a ¼ of the volume
2. Strain out the onions and garlic to another stock pot( do not place back on the stove top.
3. Add in the cheese slowly stirring to melt.
4. When all of the cheese is incorporated finish with salt, pepper, lemon juice. Truffle oil and truffle peelings
5. Toss with cooked elbows and top with crushed Ritz crackers
