1.Peel, de-vein, and butterfly shrimp.
2.Over medium heat, melt butter and add garlic, onions, peppers, celery, carrots, and corn. Let sweat until vegetables are soft.
3.Remove from heat and fold in sour cream and lemon juice.
4.Gently fold in bread crumbs and crab meat. Let cool.
5.Portion stuffing into about 2 ounce portions. Stuff the shrimp by placing the stuffing in the shrimp and folding the tail over the top.
6.Line up shrimp in casserole dish and bake at 400 degrees for 10-12 minutes.
