Ingredients
2 lb mixed heirloom tomatoes
1/2 lb peeled red onions
2 tablespoon extra virgin olive oil
Sea salt and freshly cracked black pepper to taste
Directions
In a small roasting pan coat the onions with the olive oil
Roast the onions in a 350 degree oven till tender. Allow onions to cool
Reserve the juice from the roasting pan
Dice the tomatoes into 1/2 inch pieces and place in mixing bowl
When cool, dice the onions in 1/2 inch pieces
Toss tomatoes, onions, reserved oil and salt and pepper
