Uncle Tony's Pizza & Pasta founder, Edward A. Carosi, recalls when he was a kid making ravioli in the basement of his grandmother’s house. Everything was made from scratch. They would jar tomatoes, peppers, and eggplant, which were all fresh from his grandmother's garden. He grew up with great home-cooked Italian food made the old-fashioned way. When he opened the first Uncle Tony’s Pizza & Pasta in 1969, he was determined to serve their products as fresh and tasty as the great food he had as a kid, and they do that seven days a week at every Uncle Tony’s Pizza & Pasta restaurant.
